Breakfast Muffins PDF Print E-mail

adapted from Watirose Food Illustrated January 2006


 

300g plain wholemea flour 100ml sunflower oil
50g rolled oats
150ml natural yoghurt
3 heaped tsp baking powder
150ml milk
½ tsp mixed spice
1 medium egg, beaten
½tsp ground cinnamon
 2 medium bananas, mashed
100g raisins
1 tsp vanilla extract
100g dried, chopped apricots
1 medium carrot, grated
 50g caster sugar
2 small apples, grated



combine the dry ingredients (left column) in one bowl, and the wet in another. Add the wet ingredients to the dry, and mix only to combine. spoon into a 12 cup muffin pan. Sprinkle what you like on top - sunflower and pumpkin seeds, more oats, more berries. Maybe add some nuts - I took these out of the recipe, but you could add 50g of walnuts, or pecans.

bake for about 20 minutes at 190oC/gas 5

leave in the tim for five minutes to cool.
