adapted from Watirose Food Illustrated January 2006 | 300g plain wholemea flour | 100ml sunflower oil | 50g rolled oats | 150ml natural yoghurt | 3 heaped tsp baking powder | 150ml milk | ½ tsp mixed spice | 1 medium egg, beaten | ½tsp ground cinnamon | 2 medium bananas, mashed | 100g raisins | 1 tsp vanilla extract | 100g dried, chopped apricots | 1 medium carrot, grated | 50g caster sugar | 2 small apples, grated | | | combine the dry ingredients (left column) in one bowl, and the wet in another. Add the wet ingredients to the dry, and mix only to combine. spoon into a 12 cup muffin pan. Sprinkle what you like on top - sunflower and pumpkin seeds, more oats, more berries. Maybe add some nuts - I took these out of the recipe, but you could add 50g of walnuts, or pecans.
bake for about 20 minutes at 190oC/gas 5 leave in the tim for five minutes to cool.
