1 egg
1 cup buttermilk
1/2 cup dark or light brown sugar as preferred
2 cup sifted all purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup porridge oats
1 cup chopped dates or raisins
3 tablespoons melted butter
combine egg buttermilk and sugar
sift flour with soda and salt
add flour mixture all at once to the egg mixture, stirring only enough to blend.
add oats and dates, stir only to blend, fold in melted butter
bake in a loaf tin 45 to 50 minutes at 350 until well browned and firm to the touch. turn onto a wire rack.
serve hot - or cool thoroughly, wrap in foil or waxed paper, store in a cool dry place to mellow for 24 hours.
